  • 1/2 cup finely chopped green onions (white and green parts)
  • 2 medium tomatoes, finely diced
  • 1/4 cup extra virgin olive oil
  • 1/4 cup fresh lemon juice (about 2 lemons)
  • 1/2 teaspoon salt, or to taste
  • 1/4 teaspoon black pepper, or to taste

Instructions:

  1. Prepare the Bulgur Wheat:
    • Whisk together the olive oil, lemon juice, salt, and pepper.
    • Add in the bulgur and mix it with the dressing. Let it soak for at least 15 minutes (30 is better).
  2. Chop the Herbs and Vegetables:
    • Finely chop the parsley and mint leaves. It’s important to chop them as finely as possible.
    • Chop the green onions finely.
    • Dice the tomatoes into small pieces.
  3. Mix the Salad:
    • In a large mixing bowl, combine the bulgur, chopped parsley, mint, green onions, tomatoes, and cucumber.
  4. Toss and Adjust Seasoning:
    • Toss everything together gently but thoroughly until all ingredients are well combined.
    • Taste and adjust the seasoning with more salt, pepper, or lemon juice if needed.
  5. Chill and Serve:
    • For the best flavor, let the tabouleh sit in the refrigerator for at least 30 minutes before serving to allow the flavors to meld.
    • Serve chilled or at room temperature.
